    Anyone know if Amazon Canopy Warranty is worth the money?

    I usually don't buy warranties but I recently did buy a Canopy warranty on a vacuum sealer from Amazon.  It was only 4 bucks for 3 years so I figured what the hell.  I've read how some of those sealers can be finicky.

    I'm still experimenting with what works best for me, but I have really had the best success with just taking the chip loader all the way out. One of the reasons I got the AMNPS was for cold smoking also, which you really cant do with the MES as it sits.

    I made my first rack of baby backs over the weekend using 2-2-1 @ 225 They were good but not quite as tender as I like them.  I wrapped them in foil with some OJ in the bottom for the middle 2 hours.  Next time I'm going to try to raise the temp a bit and place the ribs in an aluminum foil...

    It's London Broil. It was around 180 - 185 for 6 hours or so.  Depends on how well you like it done.

    I too had trouble with not being able to read the control panel in the sun....until I realized I could just smoke on my screened in porch.  Problem solved.
