Hi there,
I am going to be doing one today starting about 2 p.m. and I can do a tutorial as I go, but to answer your question you want the braising liquid the be about 3/4 up the meat. I don't use the top of my dutch oven to cover, instead I cut out a piece of parchment paper to fit over the...
Wow!! That is fantastic! I'm so proud of Todd and I can say I knew him when.... The bottom line is he makes amazing products and it shows. Good on ya brother!
I always love seeing your sausage Dan. I would love to try that recipe. I just looked it up in the book you gave me a while back. Love the Marianski brothers. Hugs sweetness!
That is just beautiful bread sir! Kinda looks a bit like a ciabatta with all those nice holes. Sour dough is the best and that reminds me I need to feed mine.
Nooooooo! I beg of you do not braise in water. The tongue does not have a lot of fat. If you braise in water you will suck out all that amazing flavor!! Even if you have to use store bought beef stock, use that over water. PLEASE! LOL! I tend to get a bit emotional. Hahaha.
Yay!!! I will make you this promise... If you braise the tongue in stock and aromatics on the smoker and it is not to your liking, I will send you the price of the tongue in a gift card. My guarantee. Promise.

It has nothing to do with cost as far as I am concerned. The first question I have to ask is if I quit smoking where am I going to buy smoked meats? There is no where to buy them. Certainly no good BBQ joints in my neighborhood. Another point I'd like to make is smoking, curing, sausage making -...
I'm not sure why anyone would want their homemade stock to taste anything like Campbell's but to each his own. I do agree with the adding of tumeric. There are many health benefits to this wonderful spice with anti-inflammatory being one of them.
