    Noob makin his own smoker

Welcome to SMF! I'm in the process of building a new wooden smoker, and I've found tons of good info here on the forums. You'll probably end up with too MUCH info on how to build your smoker after talking with these guys, but they won't lead you wrong.

First Time - Buck Bacon w/ QView of course.

Thanks MP and BC! Apparently in my neck of the woods, it's not easy to find pork bellies. I have a buddy who is the meat manager at a grocery store, and he says even he can't get them. I would have to go to a specialty meat market to find them. Local stores have specials on loins and butts...

First Time - Buck Bacon w/ QView of course.

OK, so I've done two batches of Canadian Bacon, and am beginning to understand the whole cure then smoke concept. I picked up some of those "fake rib" cuts of pork shoulder a couple of weeks ago, turned half of it into some awesome BBQ, and decided to attempt Buck Board Bacon with the rest. So...

    First time - Canadian Bacon

Thanks! I think I'll crank up the smoker for the rest of the loin, and give out Christmas Bacon!

Was lurking - thought I should introduce myself.

So far it's been mostly fish: Salmon, Catfish, Trout, etc.. Occasionally I put a pork shoulder in it, but since the little chief doesn't get much over 160, I smoke it for several hours, then cook it in the oven. Same thing goes with brisket.

    First time - Canadian Bacon

OK, so I've been lurking around for a lONG time on the forums. Finally I decided to try out Canadian Bacon. I picked up a 9lb Pork Loin last week (was on SALE), and cut a 3 lb hunk off, figuring I could have up to 3 experiments as I learned what to do, without spending lots of $$. So simple...

Hiyas! I'm Tony. I live near Lexington, SC. I spend my work days staring at computer screens, so I wind down in the evening and weekends by cooking. My Father-In-Law gave me a "Little Chief" electric smoker for Christmas almost two years ago, and I've been lurking around these forums since...
