    My first Smoked Bird

Try spatchcocking it.  Just cut out the spine, split and slice down the breast cartilage, one side of the breast bone and remove it.  Cut the breasts in half and you have two beautiful halves.  I just use EVOO and a low salt rub and throw them on the grill bone down.  Best chicken I have ever...

Comp chicken testing...we think we have a winner

love to share the recipe after the comp.  I don't plan on this being anything secretive, heck that's why we are here, to share the love of bbq.  We were just a few dudes sitting around drinking a beer at a rib competition locally a few weeks ago when we said "heck with it, let's enter this...

Comp chicken testing...we think we have a winner

Nope, just jumbo thighs.  Our testing yesterday was fun, we did a couple trays of thighs and mapped them out on a piece of paper with grading scales as we tasted them.  We found that adding one ingredient really really changed the finish flavor and the color of the skin.  After deciding we loved...

Comp chicken testing...we think we have a winner

Did these using chicken thighs.  De-boned and hammered even so we get a nicer roll to them, not a sloppy one or one and a half roll, seasoned both sides and skin, rolled tight, wrapped skin and a little on top of the skin.  Smoked to done and rested them upside down to keep the juices in.  Doing...

Comp chicken testing...we think we have a winner

Here's a few pics of the chicken we have agreed on for our upcoming first competition.  Best we have ever tasted, have times and temps perfect, skin lightly crisped, juicy and amazing.  I am thinking we have a good chance with this one.

    Flank Steak Suggestions

I take my flanks and depending on time, one of two things. Either a little salt, pepper and crushed, dried rosemary, or I make a little marinade with teriyaki, Worchesershire, soy, garlic, tabasco and bourbon and submerge it in my foodsaver cylinder and vacuum seal it for at least a half hour...

Q's for my first fatties this weekend

EPIC....just epic. Some of the competitors from the rib competition kept wandering over to beg for another taste of it, what a hit. One of the tastiest treats I have done on my Traeger....dumped on the tzatziki and a good bit of feta in the bite, wow. DO IT!!!!

Q's for my first fatties this weekend

OK just an update, I opted to do a 2lb greek fatty and some ribs, it is a rib competition this weekend, but the greek fatty has me drooling. I bought your basic pack of bacon, thick cut and two lbs of ground lamb. I put the lamb in a ziploc and weaved the bacon, no issues, seasoned the bacon...

Q's for my first fatties this weekend

BOS, yes, I am going to do the entire thing out of ground beef, chuck to be more specific. why not, worth a shot and the mini fatty sliders sound like they would be a great treat for the competition I am going to tomorrow.

Q's for my first fatties this weekend

Hey guys, I have searched through this section looking for ideas for the Fatties, I get that I have to put the meat in a plastic bag to more readily flatten it out to roll up, so here is what I am thinking of doing for tomorrow. 1 2lb ground chuck fattie with pickle, onion and cheese (I may get...

    Traeger Pellet Grills

Can't go wrong if you are considering one. The Elite is the best value right now, since the price drop you get the digital controller, wheels and bronze powdercoat. I have the Texas 075 on my deck and I could not be happier. I cook on mine probably five nights a week and do long smokes on the...

Skirt steak sammiches with Q View

I kid you not, it's sandwiches like this one that get me closer and closer to opening my own pig out joint. This was so simple, and probably one of the best lunches I have ever made. Even my cousin who is a professional chef was raving how that sandwich could launch a restaurant. Now if I...
