so last year i smoked a turkey, and have now been recruited to smoke the T every year.
I will do a Qview through out the process. right now and I have the lump charcoal in the chimeny.

awesome. i'm smoking my 2nd Turkey of alll time tonight. Decided to wrap the Turkey with bacon. (didn't know it was common, haha - still a newbie).
Anyway, I decided to use apple smoked bacon. i will be using hickory for the smoke. and i found an applywood rub i'm going to use.
smoking some ribs tonight. have 4 slabs in the smoker.i'm 2 hours in.
and will be smoking a pork shoulder tomorrow.
I am smoking them in advance b/c i'm taking them with us on vacation starting saturday.
It will be sunday and monday before we eat them.
my question is, how should i store them...
