What i was thinking is if you had a side box aka smoke generator with some air vent for smolder and used a small fan like from a computer to pull the smoke into the main cooking area. The main area would have it's own temp control and heat element. The box isn't going to be 100 percent...
I've been looking around at commercial electric smokers and getting ideas for building mine. Do you need a top vent on an electric smoker?? Don't vents help control temps when using propane or wood??

i've seen a few guys place a cheap exhaust hood over the smoke unit and it seems to work great. Only downfall in the winter, and cold areas it pulls the heat out of the garage.

Going to have to try this once the garlic is ready to be picked. I usually chop up my garlic put it in a small canning jar and fill it full of EVO and place it in the fridge. seems to keep very long time, then again garlic doesn't sit around here very long.

Sweet can't wait for the results. I had a brain storm about doing a similar system. But using a variable pilot light or tinny burner under a chip pan to keep the smoke going then one or two main burners to maintain temps. Might be a good winter project. My project list for the summer is...
