    Beef ribs need advice...

Sounds like a good plan to me. I have also done beef ribs like I do prime rib, low and slow basting every now and then. With that said I get my BEST results with 3-2-1, rubbed with onion powder, garlic powder, pepper, rosemary, and a bit of Grill mates stake rub. I baste with a mix of 6 oz red...

    First Time Smoker

My advice is to start out with chicken, its cheap and forgiving, till you learn how your smoker runs. Pork butts are another good one to learn your smoker with, although they take longer and cost more. Guys have smoked brisket for there first smoke, and got good results, and others have failed...

    smoking bratwurst?

I have smoked these with marginal results. It does add some smoke flavor, but not allot in my opinion. I find the fresh brats produce the best results. If you can find some try the way I smoke them and I think you will be very pleased with the results. If all you have excess to is the...

I start out at a low temp around 100  for about hour, 125 for another hour, 150 another hour, 175 till internal temp reaches 160.  Smoke_Chef I can't speak for mballi3011 as to why he does it this way...

    Wood charcoal vs briquettes?

I have used both royal oak and Kingsford. I find i get higher heat from the royal oak, but go threw more. I buy what ever is on sale between the two. I use a chimney starter and no lighter fluid. The only time I had any off taste was when I grabbed a bag of kingsford match light by mistake. It...

Weber Smokey Mountain vs. Kingsford charlcoal smoker.

I have the 18" WSM and use it at the lake. I grill and smoke on it with no problems. I did mods to mine to gain more space, and have smoked 6 racks of ribs with no problem, and room to spare. I have smoked 2 packer briskets and 3 pork butts, it was tight, but doable. I have seen the 22" WSM and...
