    First time making wings in the MES. Coated them olive oil and a little dry rub. Didn't want to put on too much rub in case it over powered the sauce in some way. Put in fridge overnight. Apple wood smoked at 250-260 for about 2 hours then crisped in broiler. BBQ and buffalo sauce.

    Just seasoned new MES 30 Gen 1

    Temps will vary between the two and seem to settle down closer as the smoke gets going good.  Stick with the Mav reading.

    Used top round this time.  Turned out pretty well.  Really need to get a meat slicer so i can keep the thickness consistent.  AMNPS worked like a charm this time around. The key is to let it burn for a while.
