Thanks George, great post! Part of the reason I love this Okie Joe (without even cooking on it yet, lol) is the amount of resources out there are endless. Charcoal & Wood or Just Wood?

Yeah Pine isn't good wood to smoke with! Black smoke means wasn't dry enough, if you dry pine right you can burn in a fireplace, firepit, or stove but it's gotta be dry dry dry get that sap out!

Charcoal & Wood or Just Wood?

Thanks Riverside!!! Gonna pick up a bag of coal, just to get my feet wet and learn the ropes a little bit as this is all new to me using wood as the heat source. Cook-chamber sealing

Am no expert but I think Al your spot on. As long as you're holding a temp your just fine. If it bugs you that it's leaking by all means try and plug it up. If your having problems holding a temp then sure try and plug that up a little see if helps!

Charcoal & Wood or Just Wood?

I see lots of folks getting the firebox going by getting some charcoal going 1st dumping it into the firebox and adding some wood on top. Is that just a preference Or the easiest way to get the fire going? Can you not just use all wood or do those coals really help with the temps. I am pretty...

I went with felt for now but I have the RTV (Black) on hand I used to seal up other gaps. Haven't fired it up yet, but my door is outta whack already so I know I'll have a leak just hoping I can keep a good temp.

Thanks so much George, I did rub it down a little with some canola oil but I am definitely gonna hit it again with some WD40 all over the outside at least to keep the paint from peel. Great advice, thank you!!!

    Advice on smokin some chicken

Hi folks, fairly new to smoking! Picked up a new smoker recently and going to start off nice an easy with some smoked whole chickens. Seems fairly straight forward, however for the folks that brine them. Most recipes call for a gallon or more of water. What are folks keeping the chickens in to...
