Greetings from New Guy in Montana

Hello from the panhandle of Idaho!

Smoking a 2.5 lb brisket for the first time.

I’ve not smoked a brisket that small, but your prep work and cook profile looks spot-on. As noted, 195 is usually low for a brisket to be probe tender, so it might have needed more time, counterintuitive as that seems. Unless, due to its small size, it hit peak tenderness earlier, before you...

    Moose brisket questions

I've no idea how to cook it, but I'm curious to hear what a brisket from that beast weighs!

Christmas present from wife’s son and his wife ! New weapon !

I gave my wife the exact same 12” Lodge this morning, as a big brother to some 100 year old family Griswold skillets we have. I also added the lid; harder to find, but I figured it would transform the big skillet into a shallow Dutch oven.

    Xmas breakfast

Bagels, cream cheese and lox this morning. Commercial lox, I haven’t had a chance to make my own again since the move, but salmon is VERY easy to come by in north Idaho.

    “Drones”

Pretty cool job. We now live not far from a submarine base that the US Navy has maintained in landlocked Idaho since 1946. It's their Acoustic Development Research Center, in Bayview Idaho, on the southern end of Lake Pend Oreille. https://spokanehistorical.org/items/show/589 Before...

    What Cookbook Software to use?

Microsoft OneNote. In no way specialized for recipes, but it's free, and I use it to organize much of my life anyway. I simply set up a tab for recipes, subtabs for appetizers, entrees, desserts, BBQ, etc, and paste any recipe links I want to keep onto the appropriate subtab.

US Govt considering ban of TP Link routers

Short answer: I dunno. Longer version, I think it reasonable to be a bit suspicious of any tech originating in China (I'm looking at you, TikTok!) , but that covers a LOT of ground. The link below details some serious concerns about TP Link routers, and the link below that claims there is...

    Gonna smoke cheese this weekend.

No need to run it completely empty. Throw on a couple of blocks of cream cheese with a favorite rub, or coated with Everything Bagel seasoning. It will pick up nice smoke at low temps, but it also handles fairly high temperatures without melting, should your experiment blow past the target...

    Coldest Outdoor Temp for Smoking

There is no hard lower temp limit, as @TNJAKE already noted. Some smokers will do better at low temperatures than others, but any will use a bit more fuel than when smoking on a warmer day. Insulation, like a cheap welding blanket, thrown over the cook chamber will help. When I smoke cheese...

    Medication Savings

If you have a high-dollar prescription for which a generic isn't available, and which is poorly (or not) covered by insurance, I feel your pain. I'm taking one of those. You may find comfort if you do a web search on 'patent expiration for (insert your med here)'. My expensive drug comes off...

An impressive build! Do you think you'll miss having windows?

What say you to chicken livers?

I say 'No' personally, but I recognize that plenty of people love them.

    What are you watching ?

After occasionally catching a random episode of "Last Man Standing" in reruns, I recommended it to my wife, and we've started watching all 9 seasons from the beginning. It's great! My wife loves it also, though by episode three she made the observation that Tim Allen's character had to have...

    HEIC files?

The iPhone defaults to the 'live' HEIC format, but you can turn it off (and revert to .jpg) by toggling the vaguely bullseye-looking icon in the upper right of the camera screen. Unfortunately, it won't convert those photos already taken.

...And the Poultry Throw-down winners are:

'Twas a heck of a contest! Thanks to the organizers, judges, and those who entered. I'll share a few details behind my Diwali Feast entry. The tandoori chicken recipe was fairly standard, chicken legs and thighs were marinaded for 18 hours in a marinade of plain greek yogurt with garam...
