I've ordered their book - and all of their salami sampler packages just to use for reference. Of note, this one is not in any of their packages I don't think.
I don't seem to have the same issues with fat smear but I wonder if it's because my freezer is negative 7 F... the fat actually chimes like ice in the bowl chopper. I haven't received the grinder yet. Actually, I did, they just sent the wrong model so I am awaiting the correct one :)
Welcome back! Hope you had fun at deer camp.. Looks good! Did you split up the pistachios at all? Another question - so you cubed the fat and then put it through the grinder? Why not just through the grinder if that's the case?

Question - do you add culture, wine etc the night before as well or after the final grind?
Wonder if anyone has used a continuous PH monitor for the fermentation period? Seems like a good idea to catch it right at the right time . I guess most would agree around 5.1...
Seems to be coming along ok so far. Humidity is stable at 80 percent every time I check It and dehumidifier has probably 6-8 ounces of water in it every day.
Thanks - I'm not happy that they were touching but it was kind of an emergency repair scenario and I didn't have options. For my next round I bought some new racks with covers so I'm excited to try that method out soon. I'll post pics when I do.

Here they are in the cabinet. Yeah I know that I had them ferment close together as you can tell by the mold not even around all of them.. Had a malfunction with one of my hanging bars and had to crowd them up for a couple of days. Now they don't touch and air freely moving around them all...

Yes I know where the light is and it was on when I went down there to check - what I don’t know us how long it runs a day - I’m not sitting there staring at a light for any length of time … so I just will have to gauge by how much water it creates and continue to observe humidity levels .
Well it’s not filling up in the first day so I would assume it’s not working constantly - not sure I have a way to measure how much it’s running other than the water it captures .

Checked it today. Emptied some water in the dehumidifier. it was about half full. When I checked it, the control for it was on, so it was lowering the humidity hopefully after I left.
