    Sicilian Pistachio and Lemon Salami

Sounds good. I'm planning on trying the recipe as well, hopefully this weekend, so I'll keep a close watch on PH levels earlier.

    Sicilian Pistachio and Lemon Salami

wow so just 24 hours fermentation time? Isn't longer better?

    Sicilian Pistachio and Lemon Salami

I've ordered their book - and all of their salami sampler packages just to use for reference. Of note, this one is not in any of their packages I don't think.

    Sicilian Pistachio and Lemon Salami

I don't seem to have the same issues with fat smear but I wonder if it's because my freezer is negative 7 F... the fat actually chimes like ice in the bowl chopper. I haven't received the grinder yet. Actually, I did, they just sent the wrong model so I am awaiting the correct one :)

    Sicilian Pistachio and Lemon Salami

Welcome back! Hope you had fun at deer camp.. Looks good! Did you split up the pistachios at all? Another question - so you cubed the fat and then put it through the grinder? Why not just through the grinder if that's the case?

    grinder horse power

Good idea - I'm going to try this on my next batch- thanks for the tip.. Question - do you add culture, wine etc the night before as well or after the final grind?

    PH Monitoring

Wonder if anyone has used a continuous PH monitor for the fermentation period? Seems like a good idea to catch it right at the right time . I guess most would agree around 5.1...

    New Batch this week

Seems to be coming along ok so far. Humidity is stable at 80 percent every time I check It and dehumidifier has probably 6-8 ounces of water in it every day.

    New Batch this week

Thanks - I'm not happy that they were touching but it was kind of an emergency repair scenario and I didn't have options. For my next round I bought some new racks with covers so I'm excited to try that method out soon. I'll post pics when I do. I'll take your advise and check daily. It's not a...

    New Batch this week

Here they are in the cabinet. Yeah I know that I had them ferment close together as you can tell by the mold not even around all of them.. Had a malfunction with one of my hanging bars and had to crowd them up for a couple of days. Now they don't touch and air freely moving around them all...

    Tonight's Board...

It’s nice to have a whole board full of the stuff you do - not mixing commercial with the good stuff ! Looks awesome! Question- Did you cube the fat up separate or grind it on a different place size ?

    Curing Chamber Modification

Yes I know where the light is and it was on when I went down there to check - what I don’t know us how long it runs a day - I’m not sitting there staring at a light for any length of time … so I just will have to gauge by how much water it creates and continue to observe humidity levels .

    Curing Chamber Modification

Well it’s not filling up in the first day so I would assume it’s not working constantly - not sure I have a way to measure how much it’s running other than the water it captures . Unfortunately the controls are on the back . I gave the cabinet pulled out and can easily walk around it - it’s in...

    Curing Chamber Modification

Checked it today. Emptied some water in the dehumidifier. it was about half full. When I checked it, the control for it was on, so it was lowering the humidity hopefully after I left.

    Grinder vs bowl chopper

I've got a bowl chopper, not a grinder, for making sausage. It's just what I had already before starting salamis and it works perfect for my BBQ processing days, cutting up veggies for 30 gallon chicken soup days. I can process bus pans of onions, carrots and celery in no time.. It also does...

    Curing Chamber Modification

Here's my mod - it worked out well. I'm not sure I needed to replace the fans but it's done. The unit I have has internal ducting columns so the fans don't really blow directly around the cabinet like some others do, but regardless I have two added with the controls turned all the way up and you...

    New Batch this week

That makes sense to the extent you know when the animal was slaughtered- everything I bought last week was frozen and vacuum sealed .
