ah yes s it does work great for cold smoking, with the mailbox mod, which also requires extra space, my statement is regarding to the AMPS being used in the smoker itself.
smoke daddy works fantastic for cold smoking, Keeps the temp lower than an AMPS tray,
make sure to clean the tub inside and out, don't need to paint or prime, can use some rust remover on spots then hit with some hi temp bbq paint if you want, but not needed.

it all depends on the fineed strip heater rating. The ones I have been using in my builds are rated up to 1200f and in ovens with still air or forced air, they work great if the right ones are put in and controllers that allows fine tuning are used to control them.
its all part of the programming that can be done by you. ITs all in the instruction manual, its actually very easy. The controller has far more settings and option than they advertise.

looks great, you will want to put a ball valve to use as a damper on the exhaust, and I would consider turning the exhaust to face downward, not a huge deal but with it facing up all the moisture and tar that condenses will either remain in the exhaust pipe or run back into the smoker and down...

that finned strip heater will be fine as long as it is a 15a. You will have ti use a PID controller than regulates the total power output otherwise you will burn out the finned strip heater very fast.
The best controller to use to alow that kind of functionality is the Auberins dual...
not suitable for a hot smoker conversion. look for an older fridge than has a metal insert. the foam in the one you have will melt and burn, its a major fire hazard
i have 2" outlet with a ball valve and 1.5" intake, no valve just a straight open pipe, and then I have a smoke daddy on it with a 1" pipe, so in total I have 2" in and a 2" exhaust with a ball valve. It works awesome. You don't need 2 intakes, only 1 will be fine.

I would avoid the brinkman element, 2 would heat it no problem, but you have to put a hole in the bottom of the house because of the design of them.
I would look at 2 finned strip heaters, one on each side. If you can access the bottom area under the smoker then you can put a couple of 1.5"...
If I did Design 2, I would use 2" black pipe out the back with a BALL VALVE on each outlet leading to the stack so I could control the flow and which outlet I want to use.... but.. is there a reason WHY I would want to shut off the TOP outlet and only use the Middle outlet?

the 1500welement is more than eough to get that little space over 450f if left on.
Dward i correct, if using a 220v element connected to only 110v then the watts are only 1/4 of the 220v rating. 2000w @ 220v is only 500w when connected to 110v.
you are correct on how to calculate the amps, but you have to use the decreased watts/110 for the actual amps when running the 220v...
are the holes in the liner sealed? it looks like the spot where the old mounts for the original shelves are not sealed. If they aren't you need to seal them up.

use the roxul you can buy a single bag of. youll need maybe 1/2 a bale for a smoker conversion. they all have a high fire rating, sound proofing doesn't matter.
