I have an XL BGE and love it. I cooked 2 20# turkeys at once for a wedding reception and got many compliments. That being said, I believe that either one would work. There are pros and cons I’m sure, but they are similar enough that either one should work well for you.
I put the raw cauliflower in the food processor and then cooked it in a skillet stirring often until it started to brown. This will get rid of most of the moisture. It doesn’t hurt to add some fat and seasoning to the cauliflower while cooking.
I do mine on my gas grill over high heat. Keep turning them with the longest tongs you have. As they complete charring I remove them to a gallon size plastic zipper bag. After 20-30 minutes the peels will remove easily.
Will be moving to Pa in the future. I have a lot of wood on my property here so decided to take some with me. L-R and T-B: Hickory, Apple, Maple(x2), and Cherry. As a bonus I also came away with 1/2 bucket of mixed sawdust.
