I have both Griswold and the older Wagner skillets bought on Ebay. I bought a #8 griswold dutch oven and waiting for it to arrive. My Griswold chef skillet is slicker than any teflon you will find.

Anyone here cook with cast iron pots or pans? I'm really getting into this and finding it is a lot of fun. Right now I am experimenting with different makes and finding out they can really be used for cooking most anything.
I wish you were local. I just scrapped out a range with a griddle on top and a oven below. The top was cracked and leaked grease and the customer didn't want to mess with it. Take pics of your build.
Lightfoot what are the dimensions of your flat top? 12" burners are tiny for and commercial grill. Normally the burner coverage will contact the grill top form front to back.
Just propane hood orifices will need to be used. You are going to have a major problem with air flow. Your grill is enclosed because it was electric, it didn't need it. You have no flue in the back to expel the exhaust. You will need to fabricate one or cut off the upper portion of the back...
