My church asks me to cook ribs and chicken for about approx. 200 people. Never doing this size before starting to do a little brain storming and want to make sure I’m thinking correctly.
With 200 people and serving both ribs and chicken (leg qtr.) plan for 125 meal each?
Ribs 3 or 4 bones...
I would consider making two side by side but separate fire boxes. Sharing one fire box to me would be comberson.... Maintaining two during a cook is not...

I built a 120 gal on a Harbor freight trailer (small one) it worked well, but had to redo the tongue because it was to short. I would look at trying to find a used trailer that would fit you build. Keep us posted on your build.
