The controller can easily be removed but if you have the room inside the smoker really is not that heavy . As for soaking it is a preference, with the MES there is no need to soak because you can load more chips without opening the door. Just make sure you read the instructions I had a friend...
It really is a matter of preference , I smoked ribs on my electric using the water pan and thought it was so so !!! I smoked a chicken on the electric using the water pan and thought it was great ! They wouldn't put a water pan in a smoker if it wasn't intended to be used .
Here is where I will Respectively disagree , I have used both beer and bourbon mixed with water in the pan on large cuts of meat and achieved the results I was looking for . With that said my ME is more of a toy and I prefer my offset stick burner without any liquid only mopping and spritzing .

Thanks for the tip on Flaxseed oil I followed the directions to a T and finally got to use it . I made a Butternut Squash recipe and when it came to cleanup I could not believe how easy it was ! Thanks again .
Beef - Tri Tip Only made it once , good flavor a bit chewy
Pork - Chops I Threw them away and put BBQ sauce on an old shoe it was much better
Poultry - Turkey tried once it took to long and was afraid to try it because of a really long stall

Yes a lot of the cheaper stuff can really be a pain and when using it I have had the same problem . I use a homemade charcoal basket made out of diamond cut steel , roughly 12" by 14" with a solid divider down the middle. I fill 1 side with a mixture of unlit charcoal , lump and some wood...
Finished a 13.5 hr smoke in less then ideal conditions did a Bourbon pulled Butt 1 rack of Dr Pepper ribs and 1 rack of Jeff's Coffee Brine Ribs ( Amazing !!!! ) 20 lbs charcoal 10 lbs of cherry chunks Probably twice as much as normal due to high winds . But as always well worth it !!!!
