When My cooking chamber (Offset ) gets to greasy I just grill some steaks over charcoal and wood , Burns off the grease then just paint it again with vegetable oil . I have never had any rust spots develop like I did on my old smoker .
I have now used it twice , very light subtle flavor it is definitely a keeper ! I also bought a bag of peach chips which I used in my MES tosmoke Talapia .... Very Good !
I smoked a Butt today , now the main wood was Apple Logs but when getting toward the end of the smoke I did not want to use another log so finished off with Chunks in this order Cherry , Maple and Orange . Should be a fruity Butt.....
I use a charcoal basket in my offset it is made out of diamond cut steel 15" x 15" with a solid divider down the middle. I fill 1 side up with charcoal and mixed wood chunks then put a dozen lite briquets on the other it slowly ignites the other side. Maybe something like that would work ?
Not a rub but I am partial to a Whiskey Marinade
1 Cup Soy Sauce
1/3 Cup Whiskey
2 Tbs Olive Oil
2 Tbs Spicy Mustard
2 Tbs Minced Garlic
2 Tbs Minced Onion
You can used dried garlic and onion
Marinade no more then 20 mins flipping half way
Has anyone used Orange Wood ? I was at Cabelas the other day and found a bag of orange wood chunks , naturally I bought them since I had never seen them before. Is it a light flavor like other fruit woods , what can I expect ?
I usually get my whole Briskets from Walmart ( Have not had a bad one yet ) Ribs , Butts and Chucks I watch for them to go on sale at Fry's . Costco and Sams are always a good bet if you want to go bulk . I just found Mini Apple wood logs and orange chunks at Cabela's for my offset and peach...
I smoke fish all the time and have never noticed a fish smell or taste , with that said I keep my drip pan covered and ussually do thin fillets for about an hour .

Modified Oklahoma Joe is my main go to smoker !
MES 30 " which is mainly used for Fish !
Also have a 6 burner basic Charbroil gas grill ,I like the side burner to light the Charcoal for the Smoker !
If your like me you probably wouldn't notice it I like smoke in everything !
One good tip I got was treating it with food grade flax seed oil it really makes cleanup easy .
