    I agree with pork butt you can always smoke it for 5 to 6 hrs put it in a foil pan add juice or my favorite Bourbon foil then put in the oven at 215 for 5 hrs . It will be perfect !!! The recipe is on Jefffs site

    Christmas Prime Rib

    I like dry Lipton onion soup mix mixed with just enough Kitchen Bouquet (1 to 3 tsp} to turn it into a crumbly paste . I plug my prime rib with garlic slivers about every 2" then cover with paste right before going into the cooker.

    Stirring the Pot-(Brisket)

    I usually trim Most of the fat off my Brisket but I also inject it with a Beer , Butter and BBQ sauce combo . Spritzing is a great idea and wrap with moisture , should turn out fine.

    I like to stick them in a big foil pan cover with homemade BBQ sauce then wrap in foil , give them a good steam. When you cut into them the juice flows out of them. You should give it a try !!!
