    I forgot to update. I did a test when I smoked a brisket days ago. I only used 1 probe. It was placed to the right of the pellet fire pot on the grate (on the stack side). Pid temp was set to 300*, probe never went over 245*. Probe was placed on the grate.

    It's probe tender. Resting in the oven. I'll be sneaking some samples after 9:30p. Dinner for tomorrow. It was a 22hr cook. I think with these big ones, I'll start at 225* vs 200* overnight. It temperature 211-213 all across.
