    New baffle causing temp issues?

Hey, all. I have a question. I'm using a baffle for the first  time today, and there is nearly a 100 degree difference in the reading in my grill thermometer vs the thermometer I placed on the grate. I don't know how to verify the temp in the grill lid, but I think it's fairly accurate because I...

First Time Brisket... Any and All Advice is Requested and Welcome!!!

Busy week didn't allow any time for the mods I want to do. And I have a brisket to smoke! I read about making a makeshift baffle with a cookie sheet. Has anyone done this? Any tips? I'm smoking tomorrow, when the expected high is 36 degrees! Any advice besides a blanket over the belly?

First Time Brisket... Any and All Advice is Requested and Welcome!!!

Okay, tuning plates. Got it. Now, PLEASE correct me if I'm wrong.... Tuning plates seem to be something that will take time to get in the correct placement, yes? So I start out with sheet metal. Is there a specific metal that's better? I'm guessing I'm going to have to have some small rails...

That BBQ Guru is nice!!! But the Maverick looks great, too, at a much lower cost. Why did you go with the Maverick? Also, I just read on the forum aout some really simple mods for my old brokedown smoker. I think I can get them done in the evenings this week, so I'm ready to smoke on Satuday...

First Time Brisket... Any and All Advice is Requested and Welcome!!!

Okay, so the reason I have to babysit my smoker is because it's old and leaky? I LOVE the look of it though! There's something kind of nostalgic about the look of my smoker. That big heavy black thing with it's cute little smoke stack on top!

    Grilling pork, round 2

Lol. first of all, Competition is my ultimate goal.... Just because I wanna! And can I just say THANK YOU to EVERYONE who helped me make my pork butt awesome??? It does need more work. I am the VERY FIRST to say this. It wasn't as tender as I wanted it to be. But I can do it! However, I have...

First Time Brisket... Any and All Advice is Requested and Welcome!!!

I know I said that I wanted 3 more successful pork butts under my belt before I moved on, BUT.... I'm afraid my family will revolt if I make the same meal 3 weekends in a row. So mom and I are headed to the market for a brisket this week. I have been reading the forums, and the process seems...

    First time brisket

Okay, Al, you held my hand with my pork butt, and the one I made this weekend was very good. I still need to work out a few kinks. I don't want to think I have anything even close to perfected yet. However, I think that, despite how tasty they are, my family might go on strike if I try pulled...

    Grilling pork, round 2

I did think about leaving the smoker alltogether once I got it in foil. But I guess I was being stubborn...lol

    Grilling pork, round 2

Well, the oven reheat in the broth did the trick. I was pretty impressed. And I couldn't have done it without all the excellent help I received here! Now, as soon as I get this same quality result another 3 times, I  will consider myself a pulled pork diva and move on to another meat. Chicken...

Low Fat, Reduced Sugar Vanilla Ice Cream

I have read about making my own vanilla extract, but I just haven't done it yet. But that IS why I decided to use rum for the missing liquid! I hope you enjoy!

    Chris from RI

Nice! I'm pretty stubborn. I am not planning on trying to smoke anything but pork butt until I perfect it! I am super excited to move on to chicken soon. Do you brine yours first?

    Grilling pork, round 2

So here's my new problem: Just as Al predicted in another thread, I fell asleep and didn't wake up with my alarm to check my grill temp. I'm not really worried about food safety. When I checked it at 1:40am, it was foiled and the meat temp was at 190°. Although I set my alarm for 2am, the next...

    Novice needs help!!!

I don't have a chimney for coals. I just recently got serious about smoking. I started with loose charcoal, and I'm smoking with a 60/40 blend of hickory and mesquite. It's staying relatively consistent. But I'm really tired, and I wish I were finished already!!! :)

Low Fat, Reduced Sugar Vanilla Ice Cream

I don't mind one bit! I think I need to join your group. As you probably read, I have a husband that needs me to smoke healthy foods. Pulled pork isn't one of the healthier smoking choices... But it has become a passion of mine. Any suggestions for healthier fare? Also, how do I join your group?
