This is the recipe in question. I'm hoping to be able to put it directly on the grates but I'm worried about it falling through. Should I let it sit in the freezer for a few hours before putting it to smoke?
I'm hoping to make some spareribs and drumsticks next weekend, but the ribs cook at 225 for 5 hours and the drumsticks cook at 300 for a half on each side, obviously both internal temperature dependent.

I finally got around to doing the mailbox mod, and so far so good, with two minor issues that I need to figure out.
First, I noticed that my pellets lit up again in the middle of smoking and ended up burning out quicker than they should have. It was also windy that day, so I assume that's why...
What kind of mailbox should I be looking at? My main concern is any coatings on the inside of the mailbox that I would not want burning and being absorbed into my food.
