    Sounds like you got your self a winner. Some season at higher temps. Also be aware that the burn off can be very foul smelling so keep your top vent fully open during the seasoning.

    All MES have a hot spot on the Lower right side. This has been address many ways in the past by MES owners on this forum. So have used heat baffles to address this issue. I find it easier to just reposition your meat halfway through the smoke. This should alleviate your right side burn issues.

    Good question. I know the doors are removable. I just don't know about the brackets on the older model's and the newer models and if there compatible. I have some pictures of the upper and lower hinge brackets.
