What model number MES and what year did you purchase it?
Sounds like it could be the wiring on the heating element or the controller.
If you have a heating element access door on the back of the unit.
Look for loose or burnt wired connections to the heating element.

Question if the controller is accurate to +-.01 degree. Will that help with the cycling the cooker? The heat probe on the controller is only measuring the liquid temp correct?
Yes this is correct. If you notice in the model number brake down the last number is the design year.
20070810 = (20=Masterbuilt) – (07=electric smoker) – (08=version smoker of that year) – (10=year designed)

Yes this is a 2nd generation MES as we call it on the Forum.

I couldn't agree more with you Todd. The more bells and whistles you add the more issues your going to have.
