    Smoker Advice

Agreed.  Most of the time you are smoking one day for the next day while you are reheated yesterday's meat to serve today - and like it or not the refrigerator keeps you from throwing out a lot of product.

    Which Welder

Agree with RibWizzard always liked the Lincoln products -- but bear in mind choice of welder manufacturer is almost a religious experience, kinda like Ford vs. Chevy.

    First time build need tips

I dunno... I'd like 1/4" but if you are going to line the bottom with fire brick 3/16" would be fine I suppose.  It's a matter of corrosion and burn-through over time in the firebox.

Pork Loin or PP for 150

Agree with eman! Loins and OK if you have a carving station, but IMHO they do not re-heat well - they cook to much in the re-heating process. Also my experience with butts is -maybe- 30% loss some of which goes back in with a finishing sauce.  Just cook them, don't cook them to death, and let...

    The Picnic 2015

Hey Pops, look Great! Question -- about how many folks did that batch of food feed?  I realize it was an older crowd, not many ravenous teenagers, but curious none the less.

    Catering Question

Let me add to the above.  You Want To Be Insured. --Something--, --Anything--, happens and someone goes to the doctor.  The doctor renders a bill which gets sent to the insurance company.  The INSURANCE COMPANY goes "Oh!  He ate Here!". ...and your friend who went to the doctor is all...

    Catering business

Agreed SuperDave, focused menus are a LOT simpler.  If it's a pig roast, then pig, potato salad (something neat, not plain), cole slaw, fruit, corn on the cob and there you are.  It's the ones that want 3 meats,2 salads, 2 veggies, 1+ soups, AND oysters for the same price that kill your...

    Brinkmann Trailmaster Limited Edition

Anybody ever seen or retro-fitted themselves a pellet burner to a Brinkmann BTLE?

buildfor dannyp (few question) bare with me

If you are burning through a lot, amps maybe too high maybe?  That's my favorite goof.

    Catering business

reautheir20420 I carry my license through a winery nearby that has a commercial kitchen license.  The County wanted a "Commissary Letter" that basically states I can use said facility anytime I want for food service purposes and there I am.  Since most of my cooking is done at the client's site...

    HAD to start a build...

Found an old boat trailer at the right price.  It's a Gator, model unknown as the builders decals etc. are Long Gone and I can't find a plate anywhere.  IT was acquired by my friend with a Boston Whaler on it and he only wants the boat.  Looking at ads etc. for old Gators it seems the springs...

Cooking for 300 and have a few questions

3montes I agree with you.  I tend to stick to parties of 100 - 125 max as the BTLE can comfortably take 5 maybe 6 butts at a time so even those size crowds are 2 days smoking.  I went with the BTLE just to prove I could do this stuff without spending a fortune and it has been a good starter unit...

    HAD to start a build...

OK so if the attached drawing is actually attached... I'd thought of welding on some 1 1/2 x 1 1/2 about 45 deg. from BDC to use as leg attachment points, another angle say 1 1/2 x 1/2 above the door (because of being farther around the curve near the top) to use as a hinge attachment point. ...

Odd size, yeah, fat and short, maybe that's why it was so cheap! "scab some angle onto the tank in four places" -- you mean tack some angle on it to be sure it holds shape while I'm cutting this and that openings?

    HAD to start a build...

Well -- I did consider that.  However, here's a picture of it standing next to one of my 40lb tanks, and if you need that much more cubic to get 32 more lbs. product... I don't know.  Using 4.2 lbs/gal for propane and 72 gals, it comes out to a nominal fill capacity of 300 lb.  I can tell you...
