    Thanks Jimmy, I was going with whole birds for the cost, .99/lb . It does make sense to just use thighs though, and I will move forward with that as a plan. I was skeptical about the whole birds from the beginning, and using thighs only simplifies the process tenfold.

    189 for smoker, 24 for 4 year replacement warranty, plus tax.  $222.64 total I paid less for mine, but they are still popular and seem to fluctuate in price. If Walmart sells it for less, I get a refund on difference.

    need a good brisket finishing sauce.

    I recently tried Jalapeno jelly as a foiling sauce.. everyone that tried it loved it!! I mixed the jelly with the au jus from the pan and basted over the full brisket before foiling.
