Ok I see your point. I will still have to install at the bottom of the smoker. I don't have the time to tear it apart this year and build it with heat from the top.
My temp range will be 165-170s. We mainly make sticks and Bologna. I have other units for my butts and ribs
thanks. I wasn't sure if there was a particular PID that people preferred or what.
we use this mainly in the winter months. its kinda shielded from the elements (in a shed/lean-to) but this past winter we experience some nice 10 degree nights and it was a struggle to keep a decent temp. my unit...

I plan on closing on the exhausts I have in use currently and extending an exhaust up from the bottom towards the top of the smoker. basically create a somewhat of a reverse flow so it has to force the exhaust back...
i have seen that design dave and thought about using it but since i have a decent space in the bottom to place the heating element already. if i would build a stack with a convection fan in it coming out of the bottom up through the middle of the smoker i was wondering if that would work. i...

I'm already lookin at building my next smoker lol. I'm looking at a 4'x4'x8' electric cabinet run off a PID.
My biggest question is the element. I see guys using the 1500 watt brickman replacement ones. I was just unsure if the area it could heat. Or this...

What would a philco from the 1950s be worth to buy? Guy says it's running (which doesn't matter to me) def needs a paint job. I want it for a watt burner/cold smoker
ALmost there. Man this has been a process. I can't wait to build one from scratch. Got the insert in last night, it'll work for now lol. Cutting the door trim and install stacks tonight and firing her up tomorrow.
