I haven't smoked a lot on the SmokeFire. My first efforts were discouraging and I'm trying to lose weight. Again.
Top round was on sale and I had a hankering. I bought a nice four-pounder and rubbed in some SPOG. Wrapped in butcher paper, it went into the fridge for a good night's sleep.

A couple of years ago, my brother was at the beach when a seagull snatched a burger off of a hot grill. Today, I'm smoking smoking a top round roast.
It's 33° F outside in a light snow with gusts up to 24 MPH. It is not ideal. And then I thought of you...
What is the worst weather you have...
I have a Weber SmokeFire that's on a slight slope. I use disposable foil trays to catch drippings and pour water in the trays because it makes me feel good.
Do you level off your smoker? If so, how?
Also... The trays warp out. Why am I pouring water in them? Do I need water? And if I don't...
Far out! Just in time. I'll take you up on the deal! I'll go with the four probes, though, and grab the carrying case, too! It nice that there's a case for this because it's just a mess without it.

I've never liked mulch. Too messy and you still have to weed. I just go bare ground and some Preen or, better, Snapshot to relieve weed pressure. Sure, mulch looks nice but so does some nice, clean dirt or lawn growing right up to plantings. Edged for clean mowing.

I go on a sourdough jaunt from time to time. I can never get the timing right to fit into my day and wind up giving up again.
One day, I baked like a dozen loaves, one after another, to see where the best results were. I had bread all over the place. So aggravating. Argh!

Hmph. Good idea. I'm going to have to mull this one over.. I'm about 100' ASL. What are you doing, putting probes in water inside the smoker or just checking them out the counter or stovetop and doing a mental calibration?

I'm reading almost everywhere that they are all trash such that I don't want to take away from my SmokeFire too much. I knew this could be an issue but when the stall (I thought) lasted like two hours and I noticed I could move the dial on internal temperature when I adjusted the smoker higher...
