    Prime rib help requested

Rib roast is probably the most flavorful piece of beef. Personally I only use a light coating of olive oil and generously rubbed with kosher salt and fresh cracked black pepper. You will be amazed with the flavor from this simple preparation. Last one I did I smoked over hickory and it was...

    Official SMF December Throwdown

Please do not hesitate to post or PM me any other suggestions that you may have in the future. But keep in mind this is just for fun so we need to keep it simple. The point of...

BBQ Pitmaster show on TLC tonight

Judges cannot disqualify anyone. If there is threat of disqualification from an entry it is brought to the attention of the table captain who in turn brings it to the attention of the KCBS reps and only they can disquallify an entry. I took the judging class earlier this year in hopes to get...

    HoosierDaddy Indiana bbq competition

Well, as a courtesy most teams do not give out samples to the public during events where there are bbq food vendors. But im sure if you hang around after the last of the turn in times people will give you a bite or two.

no need to worry about flaking fish...

If you rub oil directly on the fish (both sides) and oil the grill grates right before you put the fish on it should not stick.

    Prime Rib on the UDS

Scored a whole prime rib and decided to try it out on the UDS. Seasoned it with kosher salt and fresh cracked black pepper. Smoked it at 225 with a little bit of oak until internal temp hit 120. Took around 4 hours, then let it rest for 30 minutes. Served it up with a baked potato, my moms...

A new addition to the family.

The other day we adopted a stray dog that a friend of mine found. After a couple of days of searching for the previous owner we decided to keep him. Unless someone claims him of course. He is a really sweet dog and the kids love him. We are pretty sure he is a pekingese. Anyway...

I vote for a monthly throwdown. We could have a poll on what the first category will be and then the winner of that throwdown gets to decide the theme for the next one. As far as the weather is concerned, I smoked a pork butt last year when it was 12 degrees outside. Some people can handle it...
