I've found that my smoker will run hot on the fire box end when I drop the opposite end just below level. when I lift the opposite end to be a degree or 2 above level things even out. If I raise to high, I see the opposite effect and my fire box end will run cooler.

Build a basket. I have a 60 gallon and I found I needed to contain the fire area to a 10x10 center area of the fire box. it helps keep the coals together. I put charcoal in to get my temps up and then I switch to wood. I use can size splits and it helps keep those all together as well. My basket...

As someone who just built one and had my first burn go to hot. It was the size of the fire. A SMALL hot fire, contained is the way to go. I'm using a basket for both my charcoal and my wood and it keeps things neat and stops the fire from getting outrageous.
Is the powder coating heat resistant? I was able to rapidly strip to bare metal with my angle grinder and a knotted cup brush. This was done partially before starting and the rest upon completion. It kept the metal protected from rust in the areas I didn't weld.
100% complete. After several uses I added an extra work area and an upper FB vent in the door and the 2 racks are now complete.

I'm not...the issue I'm having is that it's moving over time due to not having enough friction in the connections, so when I bump the smoker it rotates and partially blocks the stack.
I Finally got to the point where we could run it. I'm missing the upper rack and after running for a full day (pork ribs) I've made some notes on things I wants to change this weekend before running again. I'm going to add a door vent as suggested and and add some type of stop for the chimney...
