This would definitely be an improvement. But i get by ok with what have. I would rather find a person in my area that's new to smoking and give this Inkbird to them to enjoy. So many people have helped me get started in smoking, i feel its only right to help the next guy who's just starting out...
Sorry to here of your misfortune. What did the police have to say about it? They might be able to help you find out who is responsible. Also sounds like your landlord needs to "grow a pair".

Are you mixing, stuffing, and smoking right away? Or are you letting the meat set in frig over night, then stuffing / smoking?
If letting set in frig, try reserving some of that water and mixing in right before stuffing / smoking.
This can be done as long as the heating element(s) wattage is high enough for the chamber size. Plus the temperature controller must not allow for much of a temperature swing. Don't forget insulation plays a big part into all of this too.
After thinking about it some more, you might be better off building a shelf out of expanded metal and use a foil tray like mentioned above. That way more heat can come "through" instead of rolling "around". You just have to play with it til you get something that works.
As long as you have your cabinet temp probe up high and not in the direct path of the rolling heat, you should be fine. It is not drained anywhere. Actually it acts more of a heat sink absorbing direct heat and radiating it off gently. It's 1/8th inch thick.

Find an old Enterprise #32 and put a motor on it. Heavy duty and will last your lifetime. That's what I use. Works great and parts are still available.
