    Thank you for your input SmokeJumper. I am thinking 24" for a depth on the smoker. I am using the Yoder Stockton for inspiration, just looking to get more capacity than the yoder.

    This weekends Brisket. 19 pounds and for a size reference that is 18 inch aluminum foil. This will be going on around 8 tomorrow night.

    Shaws has corned beef point on sale for $1.98 lb and flat for $2.97. Hannaford also has point for $1.99 lb. Great prices if you make homemade pastrami.
