    Why are you going to stop using mustard before you rub. I always use mustard and never have an issue with a smoke ring. Here is last weeks brisket. The smoke ring was crazy, mustard and then a dalmatian rub.

    Thank you, and I think I spent around $700 in materials. 1/4" on the firbox, 3/16" on the body, 304 stainless for the racks, plus all the misc.

    I welded the firebox  6" up the smoker. The opening is 3"X22".

    The cabinet is made from 3/16 plate, and does not need insulation.

    I built the one in my profile pic. It is a reverse flow horizontal to vertical cabinet. It worked awsome, sold it to build a bigger one. Either way you go I would not try for a hybrid. The baffle on a reverse flow works best when it is welded all the way(you don't want air leaks around the...

    Why not just move the firebox under the vertical section and make it a full-time reverse flow?

    Sorry I haven't posted in awhile. I have been smoking though. Today I am smoking a 13 pound brisket in my newest smoker. This is a shot about 3-4 hours into it.
