If you plan on just grilling on it, nothing. Just add charcoal and get to it. If you are planing on also using it as a smoker, get a BBQ Guru set up and if it doesn't already have one, a deflector plate.

Personally, I have always cooked with my food either in a rack inside of a pan or a pan on the shelve under my food. I have done that with every smoker I have owned. With the exception of my very first one. I quickly learned that I didn't like scraping grease out of a smoker. Just my 2 cents.

If you have the dual sided cast iron plancha griddle, does it take the place of the ceramic plate insert? Or, for indirect heat do you still need the plate?
My processor gave me quite a bit of ground meat. I like my hamburgers medium rare and the bear meat has to be well done. Because of this, I have not tasted it. But, I am sure that it is like the ribs and the roast. Tastes fine just not special.
I am surprised by the posts describing bear as "greasy". All the cuts I got back from the processor are very, very lean. That is why I likened it to buffalo. In fact, more like horse meat it is so lean. And yes, I have eaten horse.
