    Grinder

I went from a kitchenaid a couple years ago to the LEM #5. Havent been happier. I normally process around 4 deer a year, along with various other sausages and burger. Runs like a champ. It was on sale for $200, so for me it was a no brainer. Never cloggs up like the kitchenaid. Not sure how I...

    Chicken and Cure??

Well, I started 4 whole chickens in Pops Brine solution. I did add the cure. I want to see how that turns out. My dad is going to bring over a whole wild turkey to smoke too. He is going with a standard brine without cure. Smoking should happen either Friday or Saturday. Here is a sneak pic of...

    1st Shot at Bacon

Thanks for the reply.  The 1.45 grams/# max on cure/instacure #1 makes sense.  I'm a little fuzzy on the salt and sugar percentage.  Is that percent of meat weight?  So if I have a 10lb belly, so roughly 90 grams of pickling salt and half that of sugar?  Sorry, I'm probably overdoing it, but...

    Chicken and Cure??

I've tried smoked turkey that was smoked and had a slight ham flavor and was pretty pink. Sounds like it was cured.

    1st Shot at Bacon

Going to do some bacon this week. I ordered some cure #1 and have whT I think should be everything else. Can someone give me a basic cure recipe to use per pound of belly? i know the spices are fairly variable but have seen a LOT of different ways. I would sure appreciate it. Thanks. Jason

    Chicken and Cure??

I am kind of newer to smoking. Been doing sausages mostly. I know that when doing sausage, cure is used to prevent botchulism. That to me makes sense. I don't, however understand why most poultry, when smoked, only uses a brine without cure. I have done chicken and ribs in the past without cure...

Thats them pre-smoke. Here they are right after a bath. They taste great! . The areas without good smoke turned out fine and looked good after a night in the fridge.
