Love a good ring bologna. You can buy ring bologna casings online. I get mine locally. Recipes vary depending on what part of the country you live in. For me it's a good midwest style bologna. PM me if you want my recipe.
Good looking gumbo. My favorite to make is a seafood gumbo with andouille and okra. It helps some to blanch the okra first as far as the slime is concerned, but it also helps to thicken the soup. We grow a lot of okra in summer here.
We had a similar tradition in the upper Midwest around the holidays. Raw ground beef (usually ground round or sirloin) and onions served on rye bread with salt and pepper. The raw egg is a no-go for me as well.
Not familiar with Hoff's as I grew up in SE WI. Parents used to make regular trips to Sheboygan when I was a kid for brats at Luedke's market there. They have since closed but Miesfeld's there has the world champion brat. I may try some of those next time I get out that way.
