    Bacon question

As long as your cure was right to begin with and is generally well distributed on the surface you are fine. Even though its a "dry" cure process, the whole mess pulls liquid from the meat pretty soon and it will be covered in a brine more or less. I overhaul my bacon every day it cures...

    Spare tire!!

I would think the tongue of the firewood box would afford a decent place to mount one. Northern tool has a variety of carriers that could probably be modded to work http://www.northerntool.com/shop/too...atchallpartial

    Tones Spices

GFS? Is that a Good Food Store? Nothing like that around here, but I do have a pretty good locally owned natural food store with a heck of a bulk spice area. I think I'll save some Tones containers and refill from there on those odd items. I'll second your motion on Spring, although it snowed...

    Slicer

I've been on the lookout for a Waring Pro FS 800 slicer after reading some good reviews. I missed out on one on the Ebay for $123 earlier this year. Got a "rarely used and in perfect working order" one today for $66. Hope it arrives in time for my corned beef and pastrami slicing needs. Also...

    My Try at Corning Beef

I got two briskets doing the backstroke in brine right now. Lets see that mound of salt is surrounded by garlic powder, onion powder, cloves, pepper corns, coriander, mustard seed, allspice, rosemary, fennel, cinnamon stick, bay leaf, red pepper flakes, pickling spice and then brown sugar...

    Storing Meat Slicer and Grinder

I would think that's a great idea. Off the top of my head, I can't imagine a situation where you would need both pieces of gear at the same time. Great plan.

    new interest in smoked cheese

Don't see why it wouldn't work. The smoking area only needs to be around 80 or so.

    Source for element, thermostat, etc?

A PID can be programmed for changes you want to occur during your smoke schedule. For Example it can start at around 120 for an hour to dry your meat, then raise the temp the second hour to 130 as you start to add smoke, then up say 10 deg every hour to final finishing temp of 180. Depending on...

250 gal. reverse flow build started

Very nice build so far. The trailer alone is a great piece of craftsmanship. What method did you use for purging the propane tank? Keep up the good work!

    More Cheese

Wanted to keep things simple for this weekends smoking since I'm on call for work. Cheese fits the bill nicely. Did some cheddar and pepperjack Tillamook for us, and several other varieties for coworkers and friends. 2 hours of cherry at 80 deg. Now the long wait.

    now thats a campfire

I smacked his hands, tossed the log away, and told him to keep his mitts away from my cooking fire. It had finally burned down to a nice bed of coals, he felt if there weren't flames lapping at the steaks they wouldn't cook. Those ribs and Tbones couldn't have been better.

    finishing off with steam

I've not done it yet, but it sounds like a great way to finish off what would otherwise be a long ending to the session.
