Oh damn. Now that takes me back to high school. I've tasted every one of those in both directions. Did you guys have Richards Tripple Peach? Stronger and cheaper than good old Mogan David and tasted like peach flavored battery acid.

Your breakfast sausage recipe is what I've been using for months to make bulk. Just some slight alterations with a bit of garlic and a lot more sage. Good stuff!
I'm new to grinding myself. Started out with the KA grinder and after a few times got a LEM #8 a few months ago. BIG difference. I can't feed that thing fast enough. Good luck with which ever grinder you decide on. I don't think you will regret it.
Grinding my own beef has been worth it alone...
Thanks for all the info and pics really help. I've taken out the coppa several times for bacon but mine didn't near as pretty lol. I need to try smoking one and cutting steaks out of it like @Dave in AZ mentioned.
Those pork steaks look amazing! Nothing like the ones in the grocery store.Will give that a try for sure. Do you cook them low and slow or treat them like beef? I guess both could work. Just wondering if they are still too tough at 140 or so?

When cutting up bone-in pork butts for sausage do you trim at all or just cube all it up grind? I'm using it for just general sausage. Breakfast, italian, brats, ect. Thanks!
Not disagreeing with you @indaswamp but I don't think INOX is any indication of size or fitment. I have very little experience with grinders. Only been using one for a couple of months. But INOX seems to be a European designation for stainless steel. I've seen lots of knives, guns, and tools...
Yeah one of my best friends in high school had a black Oldsmobile Delta 88 with black interior. That car was nice but it was one hot SOB. In the heat of GA summer it made my old ass 69 super beetle seem a lot more appealing lol. It had a set of JC Whitney cloth seat covers.
