    One of my favorites! We’re harvesting beans and the tops on my onions just fell over. The garlic is almost done curing and there’s a half belly in the process sitting in the fridge. This will be a frequent side dish over the next six weeks or so.

    For bone in splits breast, I brine and then smoke at 250 for two hours.

    Absolutely. I use jalapeños escabeche style all the time. They turn out fantastic and the pickling and flavorings add another level.

    Looks great! I do six pound breasts after a 24 hour brine. Four hours at 250 produces consistently superb results.

    Okay, size isn’t the issue. When you let cucumbers get too big, they’ll start to turn yellow. I’m thinking too much water. This is Gary’s thread, so he may have other input.
