Can I use a "Beef Round Sirlion Tip Whole" for Roast Beef for (slicing) ??? MIL picked one up(9.5lbs) on sale and dropped it off and I'm not familiar with this cut. If this won't work well for roast beef, what else could I use it for or turn it into???
Thanks
Mike

I think it really helps to "loosen" up the brisket and also allows the juices to fully redistribute throughout the meat. Franklin keep his finished briskets in a (140-160 degree)food warmer for 6-8 hrs. until he opens. I don't really know if this is part of what makes his briskets legendary or...
Today at Costco $ 2.69/lb for the Prime Whole briskets. Case price(5 pcs.) was $2.55/lb. I went there to buy a case of them but they won't let you pic through them at the case price. It's take the un-opened box at that price. They only had one brisket out in the store case, so the meat lady...
If you have any left. Place the slices in a foil pan with some liquid ( butter, apple juice or apple cider vinegar ect.) and cover tight with foil. Put back on the fire to re- heat/steam for an hour or two.. That should tenderize them pretty good.
I have saved a number of briskets doing this.
Like many here I am a Franklin purest when it comes to brisket. I normally do one or two briskets a month using "choice" briskets from either Wal-Mart or GFS .This one I got from Costco last week which is their Kirkland brand "Prime". and it was 19.01 lbs. @ $2.89/lb. More on this later. ...

Ya same here. At our Wal-Mart and GFS they have been $2.68-2.97/lb. Most at Costco were in the 12- 15 lb range. I normally buy that size also, but this big one was marbled really well.
Today at our closet Costco (40 miles away) Kirkland "Prime" packer briskets were $2.89/lb. I piked up a real nice 19 lb'er. I forgot to check but that should put the case price at around $2.40 ish /lb. Meat dept. guy told me that they adjust the meat prices(either up or down) on Monday's and...
I have the same cooker ( Okla. Joe. Highlander) and am doing a packer brisket and pork butt in it as I type this. I got mine last fall and have been using it quite a bit.
When I got mine I put the sealed strips on the doors and used high temp silicon on the fire box halfs and where it...
