decided to start my Memorial Day Brisket on Saturday (well, I guess Friday since that is when I seasoned the brisket).
Found out that the local Randals had a sale on brisket, $1.99 lbs for choice whole packers.
at 230 pm trimmed the fat cap to 1/4" and seasoned with a dalmatian rub...
