    I usually do chicken with ribs just because the cook time isn't as long as a pork butt or brisket. If you want to go outside of just meat, make a couple of fatties. As far as sides, I like doing collard greens, or making baked beans from scratch and tossing them on the smoker for that smoky...

    Starting with electric or propane is actually sort of nice. You'll be able to concentrate on your seasonings without worrying about temperature control as much. I'm sure your first cook will be great! Good luck, and welcome to the obsession...

    Anyone using it? I'm doing a trial run with it on Labor Day. Hoping to use it in this month's competition if I like the results.     It's a KCBS competition, so it's the standard brisket, butts, ribs, and chicken on Sunday. On Saturday, they have dessert, iron chef, sauce, and Kid's Q.
