    Smoked catfish Skin On or Off

    I filet my fish. It's the best way to remove the skin (esp catfish) . Under that skin there is fat and dark meat on the bigger fish, that needs to be removed. I haven't smoked any catfish yet, I grill mine mostly. I did smoke some white bass the other day (they were great) skin off.

    This is great advice for anything electrical esp. tv's, cable boxes, etc. Learned this from my son that was taught it in electronic school. Also I have read that some put hot or boiling water before trying to preheat.

    It has always worked before with vent at least 1/2 open but I pull the chip loader out 3 or 4 in.

    Nothing from above, butt is in pan.  The pellets were about level to top.  I'm wondering if they were starved for air.

    Try filling an old pan full of ice in the smoker to cool while you are smoking.

    These are deep fried, red meat removed. That is why they look like fish sticks. The smaller pieces usually are tasted for quality control.
