I actually haven't gotten around to smoking them yet. Hours at work have been crazy and after my first batch of jerky everyone wanted me to make more.

I can say that in the last batch I didn't get alot of heat from the brine. That's why I increased the ratios in this one, and specifically added the pepper flakes and extra cayenne. There was quite a bit of pepper that stuck to the jerky throughout the smoke. I'll repeat this recipe but grind...

Tried cracking a bunch of black pepper on the last batch but just didn't do much for me. May try white pepper or mixed peppercorns on top next time. Current run has another 45 mins on smoker (total of about 6:30) and if I'm not impressed I'll keep mixing it up until I am. This is the tastiest...
Last time it seemed like it lost alot of flavor by drying previously. And I wanted as much pepper as possible to stay on. If it doesn't turn out this time I'll try rolling in paper towels before racking.
Last go was good for a first try, the extra smokiness was actually pretty good once it rested in the fridge for a few days. Still not what I was looking for: not very spicy, almost no pepper flavor. "Snowpocalypse" ended with us getting about 20" in 48 hrs, decided time to fire up the smoker...

It's 4am and time to get the jerky started. Decided to start a couple hrs early simce I have to be at work in 15 hrs. Better safe than sorrry. Temp is 21*F and should be in the mid-30s by this afternoon. Light snowfall turns this into a perfect jerky-smoking day!
