Thanks for the fast reply! I've heard good things about the MES so will definitely look into it. I debated the dehydrator route as well, but think I'd get a more use out of a more substantial smoker. The little chief has put out a load of jerky and trout so I'd definitely still keep it around...
Hello everyone, long time since I've posted. Just got done with a batch of jerky in my Little Chief and I realized I need an upgrade. Had the jerky in there for over 10 hrs (it was very cold out) and still had to throw it in the oven for a few.
Ideal price range would be around $200 or so, and...
Took a dozen trout out of the freezer and thawed them out.
Dry brine: 4 cups dark brown sugar, 1 cup salt, 2 tbsp black pepper
12 hrs later (pretty sure this was way too long)

I do it mainly because at this time of year the temps fluctuate so much with the time of the day it's way too hard to predict how long it will take, and opening the topload every time to check lets 90% of the heat out. Once I upgrade smokers outside temp won't matter near as much.

Nothing wrong with ground meat jerky! I'm going to be getting a chest freezer soon and when I do we can get really good deals around here on bulk lean ground beef so I can stock up. Just gotta figure out a way to smoke the ground sticks, and dig out my jerky gun.
Thanks for that tip jerky nut. Just ate the last of this batch earlier today so may have to try it out on the next one. If I do I'll have to decrease the pepper in the brine a bit. This stuff was plenty spicy.
