Thanks Mike and Lemans, I did bump up the temp a little to 235 so we'll see. Still not budging and been a few hours at this temp. Not sure what the deal is. Starting to question my thermometers but doubt 2 are wrong. When I can slide one in really easy like butter I guess that is when it will be...
Hey all, I'm doing a small 4 pounder today and seem to be stuck right at 171 and has been there for about an hour. I wrapped it at 160 then went up until this point. It's been in there over 8 hours and i've tested it with 2 thermometers, same reading. Just wait it out?
It's definitely not done...
I looked at it this morning and wasn't bent that much to notice in a picture. Like I said I just crimped the sides in a little with some pliers and it fit better.
I'll snap a pic in the morning; throwing on a small brisket. I just took some pliers and bent the sides in a little bit not sure if it will be that noticeable on a photo but I'll try to get a good one.

I have a MES 30 2nd gen and have to sort of wedge the amnps right next to the heating element unit. There are no rails to put it on and wanted it up off the bottom to help with air flow. It's a tight fit but works well.
Ribs were very good. Won't be quitting the day job just yet though, sadly. Wife approved as well and gave me 2 thumbs up. Making rib tostadas with the leftovers for the game tonight. Shell, black bean with a little yogurt paste, rib meat, spicy slaw on top....
