Thanks Seaham and Smokin-Q... I'll put those to use. I'm thinking a little lower temp though, I'm going to be doing the 3 Butts at the same time, and I don't want to over do those. May split the difference and run it at 250ish. Thoughts? Is a brisket about the same time/lbs as a butt? My...
So I have a few questions before my first brisket:
1) Does someone have a link to Jeff's step by step basic brisket?
2) Rub and marinade for a couple days or rub right before smoking?
3) Trim or no trim?
4) Smoker temp, goal temp, any mid step temps?
Oh hell, I just need Jeff's (or...
I would guess if I closed all the dampers and the stack, it would minimize draft, keeping heat in, and minimizing ash blowing around. Especially on a reverse flow...
Also, by the time I deliver the pig, I could have it wrapped in foil to rest...
I know I have some research to do, I'm just trying to find all the options to have an informed conversation with planners and city parks and rec people.

Another thing to try is the Red Jalapeños, They are actually milder than the Green ones and have a little sweetness to them. Still have the heat, just not as much as the green ones.
So, I have a fishing trip this weekend with friends, and the cabin we are going to has a propane grill.
Anyone have any ideas on how easily to add smokey goodness to a propane grill with out having to do a mod of my friends grill?

So I am looking at upgrading my current pit to a Trailer Unit. I've been asked to do several events for friends and family, crunch and other associations, that I could use a bigger pit as well.
Here's my question for other Trailer / Event Pit Masters. For those long slow smokes, which most of...
So, I am initiating the new iGrill2 Thermometer and iDevice App. I set up the ambient and to meat probes like this.
I've got the ambient (probe 1) up front center with the red sleeve
Probe 2 is in the butt in back on the right (also a red sleeve)
Probe 3 is in the butt front and left...
