I got my 40" MES replacement from Masterbuilt yesterday.
I seasoned it according to the manual and everything went fine.
This morning I got a couple of racks of ribs ready, set the temp for 230 degrees. Well, its been 90 minutes and it won't go above 165.
Any ideas?

I can't understand why I had to wait since last October for them to send me out the same unit. How can the "old" version suddenly be in stock when they have been replaced with the new one?

I made some Genoa Salami using Len Poli's recipe.
It's been hanging in the cellar and is "supposed" to be done on the 15th of this month.
There is no offensive odor coming form it and the casing has not hardened, which I think is a good sign.
But, I thought It would be getting some fine white...

I don't mop nor foil them.
For spares, I dry rub them, put them on at about 230 degrees for about 6-7 hours and sauce them after they are done.
For babybacks I leave them on for about 5-6 hours.
They will not send anything out until they get the plug and serial plate back.

The name brand is Flavor Pit. Supposedly came out of a restaurant.

I bumped the temp up to 180 and pulled the sausages around 3:30 am.
It's a good thing I'm retired and have no life!!
I was afraid things were going to be dry, but they turned out pretty good.

I'm using a Bradley 4 rack digital unit because my MES is broke.I made a batch yesterday and they were in my 4 rack digital for around 9 hours. The results were very good.
So, today I put another batch in to smoke and they have been in there for 11 hours and seem to be stuck on 135 degrees...
The email I got says they are going to send out a body kit.
Does this mean no shelves or internal parts?
And. do you think they will send out the new model, with the window?

I called and spoke to Kim.
The problem with the replacement was an email, that I don't remember getting.
They want the power cord, serial plate and receipt and will send out a new unit.

CS was supposed to send me out a new unit in January because of heating problems with the unit. They were going to send me a 30" replacement last October, but I opted to wait 'till January for the 40" replacement.
That never happened.
So, I don't think they will do anything about a measly gasket...
I just took the smoke generator apart and reseated some of the internal wires.
I haven't got a clue what I was doing, just doing it! BUT---

I'm having just the opposite problem with my 4 rack digital.
The smoke generator works fine, advances the pucks and burns them, but the smoker cabinet heat element will not get hot. When I plug the tower in directly, the element glows and heats up.
All the cables and plugs seem seated properly...
