My New Recteq Backyard Beast 1200, Condo-Style

I just took a look at those. I already have 4 boxes of assorted flavor wood blocks that I use in my Smokin'-It Model 1. Looks like basically the same thing. Thanks for the idea!

My New Recteq Backyard Beast 1200, Condo-Style

Did the initial burn-in tonight. This was at 400 degrees for an hour; I could see and feel the hot smoke near the vents. But as a test, I purposely positioned it about 8" away from the wood railing behind it, and the wood wasn't even warm. I touched the pellet box, and it was also cool to the...

Whole leaf or shredded lettuce on a sandwich?

Whole leaf, whatever kind of lettuce. Mainly because no matter how careful I am, shreds always end up in my lap.

If It Wasn't For Bad Luck...

Sorry to hear, David. I'm coming up on the tail end of the worst year of my life, but things are starting to look up. Hopefully they will for you, too.

    Peasant Bread

Baked another one this morning in a loaf pan. Added 2 cups of shredded sharp cheddar. Tastes great, but now I wish I had added some sliced jalapenos.

    deer neck

My grandmother's recipe for mincemeat pie called for elk neck meat. Not so easy to come by these days.

My New Recteq Backyard Beast 1200, Condo-Style

In the meantime I stopped by our forum friend, Y2K's (Jeff's Texas Style BBQ) near me, for lunch on the go yesterday. Had a cold ham sandwich that was to die for. He smoked, then thin sliced, and stacked it about 1" thick on a sweet brioche bun. Loaded up with lettuce, tomato, slivered red...

My New Recteq Backyard Beast 1200, Condo-Style

Decided to branch off from the original OP's thread. My condo is undergoing a remodel, but my apt lease is up, so I still have to move in, in 2 days. Right now, the kitchen is gutted, along with the sinks & vanities in both bathrooms. So the only running water and drainage at the moment are the...

What in the Sweet Baby Jesus is going on? Meat prices.

There is a meat stand at our local farmer's market. Easily twice the price of the already high supermarket beef and pork. I'd love to partake, but I'm not one of those bazillionaires.

    Anyone else make aged eggnog?

Yep, hers is 3 years old, and according to her, still going strong.

    Post your favorite knife!

I have a little pen knife that belonged to my grandfather. He was born around 1900, I think. He joined the army and managed to get to France just before the Armistice in 1918. I'd share a pic, but it's packed away somewhere. About 2-1/2" closed. Something every kid carried back then, and no one...

    Anyone else make aged eggnog?

A friend in my local pub makes aged eggnog. I think she once told me she's aged it for up to 2 or 3 years? I'll have to ask her next time we meet. But since I'm not an eggnog fan to begin with, that's one I'll pass on.

What in the Sweet Baby Jesus is going on? Meat prices.

I know when I go to the grocery store, the first area I cruise is the discount meat bin. Usually I will balk at even the discounted prices on beef.

Favorite widely available bourbon or whiskey

It's been my experience that Costco bourbons are usually made by 1792.

    Latest Bacon Project

Not to mention the slicing. I've started doing it this way also, as curling the half-frozen slabs into a "C" was getting old.

Maiden voyage of the 120 gallon beast.

That smoker is a beaut! And I like the man-cave also.

Amazingly enough, my wife does listen to me

Huh. I haven't seen one. So, if it's connected to the side, I assume the heat won't be so high? Can you use it to smoke bacon?

    Remembering 9/11

I was driving to a transit center to catch my commuter bus, and listening on the radio to these 2 local shock-jocks talking about a plane hitting the WTC. These guys had a reputation for pulling stupid practical jokes, and I was thinking how dumb this was, and that it wasn't funny at all, so I...
