    Hi all  i have an apple tree in the back garden that needs cutting back badly, at what point could i use the wood  for smoking ?does it need to dry out, any help as usual appreciated . john

    timberjet, the taste on the ribs was fantastic, how ever i did give it a coat of brown sugar for the last hour, i had the family round for tea and everybody enjoyed both ribs and pulled pork,as i said previously i did a rub and left it overnight to marinate, i really need to start writing things...

    update in at 10 am both pork and ribs 3 hours later wrapped in foil ,the rested for an hour in towels,pork crackling finished of in gas oven, ubeliveable crackling that has been smoked
