I did one a couple weeks ago that was around a year and a half old, maybe a hair older. ( buried in the bottom of the freezer). It was still in the vacuum pack, I said what the heck not throwing it away before i try it, i can do that after if I need to. It turned out perfect, taste was just like...
I didn't comment on the messed/meshed gloves because as we all know different areas call things by different names etc. I even did a google search and couldn't find anything about "messed" gloves. I figured it was "meshed" but op used it twice in the thread post. Who am I to argue. 🤣🤣
Good tip. I did a number on my finger last year doing the same thing, cleaning and handling my slicer blade. Cut through my finger and fingernail like it was butter. I bought some cut resistant gloves also. Great saftey tip for sure

I injected a flat a few weeks ago, didn't notice any difference, did the spritz as well. No real difference. Not saying it doesn't work but im a kiss princple person myself. But watching this thread for sure.

The center weld is machine welded so the heat put in originally was probably pretty even and most likely didn't put any real stress into the tank.
I think they stress relieve them also if my "how to they do that show" memory is good🤔.
Unfortunately no way to tell untill you start opening it up...
Oh man that sucks. Our snow is finally melting after 6 months, person gets a little depressed after a while. Not sure how would take that amount. Definitely not good for the mental health. Stay the course bro

Quick question about your chamber. I picked up essentially the same cooler unit you have, it has the refridge unit on top and blows into the space below. How are you keeping your airflow regulated or restricted? Im in the process of picking up pieces and parts for my chamber and im trying to...
Oh man, now that summer is coming gotta get out and start making jerky. This inspired me for sure. And I just got my teeth fixed so they won't break when i try and chew it😆

I usually give them a pinch at the ends to sort of seal them, then snip them with kitchen shears. I do this before putting them on a large pan and into the freezer for an hr or so. Then vacuum packing doesn't squish them.
My 2 cents

Ive had cooks where there seems to be 2 stalls or even 3. I've resigned to starting the cook very very early and then just holding if its done early. Doesn't seem to matter if its pork or a brisket they all have a mind of their own.

I have been wrapping my briskets because im not brave enough (yet) to go full cook unwrapped. I poke through the paper to probe but have gotten bit doing that because its tricky to get a good feel. I make a few holes in various spots when i hit 200 and just probe through them, not making a new...
Not to be a mr know it all but if this is electric smoker its a high limit switch, not a roll out switch. Roll outs are for gas appliances and detect flame or "roll out of flame". Limit switches detect a higher than normal temp and trip for saftey. Or am i missing something?
